BARREL-FINISHED OLD FASHIONED
Doc Pepe's Lab™ Barrel-Finished Old Fashioned is made using Rye Whiskey from Kentucky, cane sugar, and Angostura® bitters. The cocktail is then infused with navel orange peels and tart Montmorency cherries and rested in Caribbean Rum barrels for 3 to 6 months. The oak softens the heat from the whiskey, bringing the fruit and spice notes into balance, while tannins lengthen the finish. The cocktail is bottled at cask strength and is recommended to be served on the rocks, but can also be stirred and strained similar to a Manhattan or Martini, and garnished with a cherry and an orange peel. Each batch is crafted by hand on the Monterey Peninsula by cellar master Christian Pepe.

PALATE: milk caramel, citrus peel, black cherry
FINISH: charred oak, cinnamon, clove
